Mock Chocolate Eclair Cake
2 1-oz. boxes
of instant fat-free, sugar-free vanilla pudding
Add milk to pudding and beat 2 minutes. Fold in Cool Whip by hand. Make a layer of graham crackers in the bottom of a 9"x11" pan. Do not overlap crackers. Pour half of pudding mixture on top of crackers and spread evenly. Add another layer of graham crackers and remaining pudding mixture. Add third layer of graham crackers.

Mix above ingredients together until smooth and frost the top layer of graham crackers. Cover carefully with foil or plastic wrap and refrigerate for 24 hours to set.
