are my favorite recipes, the one I make over and over again. I've tried
for a balance of the light and healthy with the rich and extravagant.
Inside-Out Carrot Cake Cookies
I came upon this recipe on epicurious.com. I believe it was originally from Gourmet magazine. The recipe called for 1-1/2 tablespoons of batter per cookie, but they were humongous. The smaller (double) cookies are just right.
Tortilla Española
I first ate
this dish in a little coffee shop in London. I couldn't figure out why
it was called a "tortilla" until I remembered that "tortilla"
means "little cake" in Spanish.
Curried Rice Salad
This recipe
came from a long-lost magazine. I make it for potlucks because it's different
from everything else.

D.C. while I was spending a winter vacation with her. This is my potluck
dish-of-choice for dojo events.

This simple,
easy dish came from my Weight Watchers group. When you need a dish to
pass that's "on program," this is great.
Meat Loaf Roll
The loose-leaf
page with this recipe in my old Better Homes and Gardens cookbook had
gone missing! Luckily, my daughter had a copy of the recipe and was able
to supply it.
Chicken Breasts with
Balsamic Vinegar and Roasted Red Peppers
I got this
recipe at a cooking demonstration by Honorio Carpintero, executive chef
at Andy's Steak and Seafood House, Oakbrook IL. It's quick and easy, but
elegant enough to make for company.

Zucchini Bread
I got this
recipe years ago from Alan Grimes, a contributor to Dungeon Magazine
when I was its editor. Alan used to send us baked goods as incentive to
buy his adventures. The last I heard from him he was a doctor in Kansas
City. If you know him, tell him to write and say "hi."
Chocolate Chip Oatmeal

Our friend,
singer Margaret Carlson,
brought these to a picnic and was kind enough to share the recipe. With
a full pound of butter, these are definitely not health-food cookies,
but they're the best I've ever tasted.

from my Weight Watchers group. This tastes yummy, and you don't have to
tell anyone it's fat free.
Veggie Paté
Laura from
Rockford Aikikai made this for a potluck supper, and it reminded me of
my grandmother's chopped liver. Relax, there's no liver in it!
